– 1 block of firm tofu – cut into roughly 1.5cm cubes
– 1/2 cup of cornstarch (Speisestärke / Maizena)
– 1/2 teaspoon hot pepper flakes
– Salt to taste
– Soja sauce
– Rice vinegar
– Sesame or sunflower oil.
How you do it?

Before cutting the tofu to pieces, dry it slightly make sure the it is properly dry. If it’s still wet it will ruin the cover and make a mess. Sprinkle it with some salt. Lightly coat the tofu pieces in cornstarch and the pepper flakes. Make sure they are evenly covered in the mixture.

Heat oil in a hot wok until surface seems to shimmer slightly. Then carefully lower the covered tofu pieces into the hot oil.

Fry the tofu until lightly brown and crispy, remove and drain the oil on paper towel.

Separately make a sauce base with the 3 parts soja sauce and 1 part rice vinegar. Place it in a bowl ready to serve.

Arrange tofu on a platter and serve immediately. Tastes better by dipping into the sauce.
